Swedish Ring Recipe

I really enjoyed using my new NN-CS89 Microwave from Panasonic. I used the convection function to bake a Swedish Ring. One of my best friends shared her Grandmother’s 50 year old recipe for it. I really enjoyed using my new NN-CS89 Microwave from Panasonic. I used the convection function to bake a Swedish Ring. One of my best friends shared her Grandmother’s 50 year old recipe for it. Enjoy 🙂

Ingredients

420g cake flour

2g salt

65g sugar

10g dried yeast

60ml lukewarm milk

2 large beaten eggs

40ml lukewarm water

Filling 

50g soft butter

100g caster sugar

5g cinnamon

75g seedless raisins (optional)

Method  

Mix flour, salt and sugar into a large bowl.

Add instant yeast and mix well. Melt butter in lukewarm milk.

Add the milk and eggs to flour mixture and enough warm water to make a soft dough. Kneed dough for 10 mins.

Place in a floured bowl and cover with greased clingfilm & leave for 15 minutes.

Roll the dough into a rectangle. Cover with butter, sugar, cinnamon (raisins if using).

Roll and place in a ring or roll into a ring shape by hand (which we did) onto grease proof paper.

Cut slices with scissors 3/4 of the way through all the way round which gives the ring the shape.

Leave for 60 minutes to raise.

Bake at 180 degrees celsius for approx 25 minutes

Once cooled glaze if you wish & an extra tip add some lemon juice to the icing sugar, and mix until you get a pouring consistency which you can drizzle all over.
